When life gives you bananas, make banana bread!

2 c. all-purpose flour
1 1/2 tsp. baking powder
1/4 tsp salt
3/4 c. sugar
3 Tbsp. Tubby Olive Butter Olive Oil
2 large, very ripe bananas
1 egg
1 tsp. vanilla extract
1 1/3 cup fresh blueberries

Preheat oven to 350, grease and flour a 9 x 5 inch loaf pan.  In medium bowl, mix flour, baking powder and salt.  In a large bowl, whisk sugar, olive oil, egg, vanilla and mashed bananas until smooth.  Add in flour mixture and combine gently.  Fold in blueberries using a spatula, then pour into prepared loaf pan.

Bake 55 minutes, covering with aluminum foil during the last 30 minutes, if turning too brown.  Check if done, by inserting a toothpick in center.  Cool in pan 10 minutes, then turn out onto a rack, to finish cooling.  Serve warm or room temperature with a drizzle of Tubby Olive Blueberry (or your favorite) Balsamic (optional).
