We’re getting closer to the “root vegetable” season, so here’s a fast, nutritious recipe you’ll love:
1  large sweet potato, cubed
2 turnips, cubed
2 beets, cubed (not peeled)
Package of fresh roasting herbs (sage, thyme and rosemary), finely chopped
2-3 Tbsp Tubby Olive Mushroom and Sage, Herbs-de-Provence or your favorite Tubby Olive Extra Virgin Olive Oil
Salt and Pepper

Preheat oven to 425. Thoroughly wash and pat dry all vegetables.  Spread them in a roasting pan and drizzle with an olive oil of your choice.  Toss in herbs, and season with salt and pepper.  Roast in pan for 35-45 minutes, stirring at least once, until vegetables are cooked through and browned. Serves 4.
