We think you’ll agree that this asparagus & cherry tomato recipe is easy to prepare and delicious!  Prepare local asparagus, trimmed and cut into bite size pieces, and lay out in a single layer on a sheet pan. Cut local cherry tomatoes in half, and add to asparagus.  Drizzle with Tubby Olive Oro Bailen Picual Extra Virgin Olive Oil, or your favorite Tubby Olive EVOO, sprinkle with salt and pepper, and dried herbs like basil and thyme. Roast at 375 for 10-15 minutes until slightly tender. Place on serving platter and drizzle with Tubby Olive Traditional 18 year-aged Balsamic for extra flavor. Enjoy!
