This versatile little veggie paired with goat cheese and a Tubby Olive vinaigrette will be the hit of your Super Bowl Party! Here’s how you do it:
Ingredients: 6 small red beets, 4 oz. fresh goat cheese, 2 tbls minced chives, 1/2 cup Tubby Olive Basil Olive Oil, 1/3 cup Tubby Olive 18 Year Aged Balsamic, salt and pepper to taste.
Directions: Wrap beets individually in foil and place in 400 degree oven for 30-45 minutes. Remove from oven, let cool slightly and carefully peel off the skin. When the beets are completely cool, thinly slice and spread on plate, sandwiched with the goat cheese in between. Whisk oil and vinegar together until well incorporated, then drizzle over the beets and goat cheese. Sprinkle with chives, salt and pepper to taste. Serves 4.
